Are you getting tired of dining hall food? Why don’t you try making these easy, no-bake energy bites! Here’s what you need:

1 cup rolled oats
2/3 cup coconut flakes (I use the shredded coconut from Trader Joe’s)
1/2 cup peanut butter
1/2 cup ground flax seed (you can order this off amazon or go down to Whole Foods)
1/2 cup chocolate chips
1/3 cup honey
1 tsp. vanilla extract

Now all you have to do is stir all these ingredients in a medium sized bowl until it’s all mixed together. After that, just stick it in your mini fridge for a half hour and let it sit. Then you can take out the mixture, roll them into bite size pieces, and store them in an airtight container for up to a week!  This recipe is courtesy of the blog Gimme Some Oven.
